Carrot Ginger Dressing

This sweet and savory salad dressing tastes remarkably fresh and bright. It pairs nicely with other recipes with Asian flavors. For a protein boost, you can add tahini or peanut butter which will add a rich, creamy texture.

INGREDIENTS

⅓ cup extra-virgin olive oil
⅓ cup rice vinegar
2 large carrots, peeled and roughly chopped (about ⅔ cup)
1 inch peeled and roughly chopped fresh ginger
2 tablespoons lime juice
1 ½ tablespoons honey or agave nectar
1 ½ teaspoons toasted sesame oil
2 tablespoons soy sauce, tamari or liquid aminos

INSTRUCTIONS

In a blender or food processor puree all ingredients.

Store in an airtight jar for up to one week in the refrigerator.

Recipe yields about 1⅓ cups salad dressing.

 

 

Avocado Ranch Dressing

This vegan avocado ranch dressing is unbelievably creamy and loaded with herby flavor. It’s the perfect healthy replacement for dairy ranch when topping salads or as a dip for veggies.


INGREDIENTS

½ cup ripe avocado (about half a large avocado)
2 tablespoons tahini
½ cup mixed fresh herbs (ie. parsley/ cilantro/ dill)
2 scallions diced
2 tablespoons fresh lime juice
1 clove powder (peeled)
½ cup filtered water to thin
Salt & Pepper to taste

INSTRUCTIONS

In a blender or food processor puree all ingredients, thinning with about ⅓ cup of water; use less water if a thicker dressing is desired (such as for a dip), use more water for a thinner consistency (such as for drizzling over salads)

Season to taste with, lime juice, salt & pepper. Store in an airtight jar for up to one week in the refrigerator.

Recipe yields ¾ - 1 cup.
